Ingredients

16 oz Ground beef, lean
.25 cup White Rice, medium grain
1 tbsp Parsley, dried
1 medium (2-1/2" dia) Onions, raw (chop finely)
4 cup Beef broth, bouillon, consomme
1 large Egg, fresh, whole, raw
1 cup Lemon Juice
Salt and pepper to taste
Tips
This soup will not reheat very well, so I do not recommend making large batches to freeze and reheat.
Directions
Combine ground beef, rice, parsley, chopped onion, and salt and pepper. Form into walnut-sized meatballs and place in a large soup pot. Cover with broth (add water if necessary to make sure meatballs are covered) and bring to a boil; lower heat and simmer for 30 minutes.
Meanwhile, using a hand mixer or blender, whip raw egg into a light froth. With blender or mixer running, stream lemon juice in.
Just prior to serving, with blender or mixer running, stream in 1-2 soup ladles of hot broth into the egg-lemon mixture to temper. Then add egg-lemon mixture to the soup pot, stir gently and serve. Enjoy!
