Who knew that you could make a tasty and satisfying beef stew without potatoes?! I served this over a mulit-grain rice mix and even my potato-loving hubby gobbled it up. Ingredients

    1 lb Stew Beef
    2 cup Beef Broth (low sodium)
    1 large Onions, sliced
    1.5 cup pieces or slices fresh white mushrooms
    2 cups pieces or slices fresh Baby Bella Mushrooms
    3 clove Garlic minced or crushed
    1 tbsp Worcestershire Sauce
    1 tsp Thyme, dried
    1 tsp Rosemary, ground
    1 tsp Marjoram, dried
    1 tsp Oregano, dried
    8 large Carrots, sliced

Tips

Enjoy either as a hearty soup or over rice, noodles or my favorite, a multi-grain rice blend.


Directions

Place beef everything EXCEPT the carrots in a slow cooker and cook on low for 6 hours. Add the carrots and continue to cook on low for 2 more hours.
