Variation on traditional ham and bean soup Variation on traditional ham and bean soup
Number of Servings: 17


    1 pound dry navy beans
    1 pound dry pinto beans
    1 pound dry great northern beans
    1.5 pounds bacon (I used overly thick cut)
    salt and pepper to taste


Wash and soak beans

Rinse beans

Place beans in large pot and cover liberally with water

Add 3-6 slices of bacon (raw) to pot add salt and pepper as desired, stir

Cook over low heat until beans are cooked most of way, stirring occasionally, add water if needed

Partially cook remaining bacon, discarding grease and anything too fatty

Dry bacon to remove remaining grease and cut into bite size or slightly larger pieces

Add bacon to pot, stir in

Continue to cook on low heat until beans are throughly cooked and soup reaches desired consistentcy

Takes about 24 hours to cook.

Makes 17 1 cup servings

can be partially or fully done in a large slow cooker, if using slow cooker make sure beans have room to move while cooking so they do not become smashed.
