Ingredients

    1 beet (2" dia) Beets, fresh
    1 tbsp Extra Virgin Olive Oil
    1 medium (2-3/4" dia) (approx 3 Apples, fresh with skin
    .25 cup, diced Pineapple, fresh
    .5 head Endive
    .5 stalk, large (11"-12" long) Celery, raw
    .25 cup, chopped Walnuts
    1 tbsp Sour Cream
    1 tbsp Best Foods - Light Mayo

Tips

All the cooking time is for the beets. If you don't like the beets, leave them out and save time. Or pre-cook the beets, buy them canned, etc.


Directions

Rub the beets with the olive oil. Place in an oven-safe pan. Cover the pan tightly with aluminum foil. Roast the beets in the oven at 425 degrees Fahrenheit for an hour. Allow the beets to cool for about 15 minutes and rub the skins off with a paper towel.

Chop the apples, endive, and celery. Chop one beet. Chop walnuts if desired.

Add the sour cream and mayo. Mix everything together. It will turn light pink because of the beets. If that bugs you, mix everything else and put the beets and walunts in last, on top of everything else.

Season with salt and pepper.
