Ingredients

    2 medium Egg, fresh, whole, raw
    2 cup Granulated Sugar
    1 serving Applesauce, MUSSELMAN'S Lite
    1 cup Libby's 100% pure canned pumpkin
    2.25 cup Flour - Gold medal all purpose flour
    1 tbsp Pumpkin Pie spice
    1 tsp Baking Soda
    .50 tsp Morton Salt
    16 tbsp chopped walnuts
    1 cup, chopped Cranberries

Tips

You need TWO loaf pans as the recipe makes a loaf to eat and an extra loaf to FREEZE for up to one month in a freezer storage bag.


Directions

1.Combine first 4 ingredients in a bowl.
2. Get a SECOND bowl that is LARGER and combine dry ingredients EXCEPT cranberries and walnuts.
3. Make a WELL {dig a HOLE in the middle of DRY ingredients bowl}.
4.Pour the pumpkin mixture from 1st bowl into dry ingredients 2nd bowl.
5.Mix together til moistened,then add cranberries and walnuts.~Mix well.
6.Spoon mixture into sprayed {with PAM or other vegetable or canola oil spray } pans measuring at least 8"x3 and 3/4" and 2 and 1/2 " height pans ~ YOU WILL NEED 2 Pans.
7. Bake at 350 degrees Farenheit oven for 1 hour.
8. Insert toothpick into center of loaves and it is ready when it comes out clean {no crumbs on toothpick}.


Serving Size: Makes 18 1 inch slices from 2 loaf pans {9 slices per loaf pan}
