    1 lb lean ground turkey 93% lean
    1 cups chopped onions
    1 cup diced celery
    1/2 cup diced carrots
    3 T minced garlic
    4 T chili powder
    1 t. oregano
    1 t. cumin
    2 large cans chopped tomatoes
    2 cups defatted beef stock
    ½ t. salt
    freshly ground pepper
    2 40 oz cans red kidney beans, drained and rinsed


Saute crumbled ground turkey in skillet until pink removed. Drain in colander and rinse in hot water
Add onions, carrots, celery and garlic and cook until soft.
In large pot, place drained meat and veggies.
Add spices, stock and tomatoes and simmer on low for 1 hour.
Add kidney beans and simmer on low for 1/2 hour.
Ladle into bowls. Top with Cheddar cheese and raw onions. (not included in values)
