    1 cup unbleached flour
    3/4 cup brown sugar packed
    4 Tbsp Earth Balance, melted
    1/4 tsp ground cinnamon
    3/4 tsp ground cardamom

    1 cup light soymilk
    1 tsp apple cider vinegar
    2 1/4 cups flour; unbleached white or whole wheat pastry flour
    1/2 tsp cinnamon
    1/2 tsp cardamom
    2 Tbsp poppy seeds
    1 1/2 tsp baking soda
    1 1/2 tsp baking powder
    1/4 tsp salt
    1 cup packed brown sugar

    1/2 cup pear or apple sauce
    1/4 cup canola oil
    2 tsp vanilla extract
    1/2 cup Grade B maple syrup


Preheat Oven to 350 degrees
Topping: Melt Earth Balance then combine well with the rest of the topping ingredients. Set aside.
Cake: Mix the soymilk and vinegar and set aside.
You'll need two large bowls. In one mix all the dry ingredients. In the other mix all the wet ingredients. Add the soymilk to the wet ingredients and combine well. Make a well in the center of the dry ingredients, pour in the well-combined wet ingredients. Combine until smooth. Don't overmix.

Pour into an oiled 9x13" pyrex dish. Sprinkle the topping evenly over the top and bake for 50 minutes or until a toothbick comes out clean from the center.

Let cool.
