    11 oz Goat Cheese, at room temperature
    3/4 cup sugar
    6 eggs, separated, at room temperature
    1 tsp lemon juice
    1 tsp vanilla extract
    3 tbsp flour
    1 tbsp butter, to grease the pan
    sugar for dusting the buttered pan


Preheat oven to 350 degrees. Mix cheese and sugar together with a spatula until sugar is incorporated. Add lemon juice, vanilla and egg yolks (2 at a time) and mix until smooth. Add flour and mix until there are no bumps.

In a separate bowl, whip egg whites until they form soft peaks, and gently fold into goat cheese mix. Do not overmix, or the cake won't rise properly.

Grease a 9 inch baking pan with butter, and sprinkle sugar until the pan is covered. Dump off the excess. Put batter into cake pan, and bake for 25-30 minutes. Serves 8-10. Calorie count is based on 8 servings
