Simple, easy to prepare lean pork dish with mushrooms, onions and bell peppers. Simple, easy to prepare lean pork dish with mushrooms, onions and bell peppers.
Number of Servings: 4


    1lb Pork Tenderloin
    2 cups whole fresh Button Mushrooms - stems removed
    1 medium red Bell Pepper - sliced into thin strips
    1/2 large yellow Onoin sliced thin
    2 tsp Salt (divided)
    1 tsp Pepper


Note: Remove Pork from refridgerator 1 hour before cooking to allow meat to come closer to room temperature.

Set oven to 375 degrees.

Place pork in oval glass baking dish, season both sides with 1 tsp Salt and 1 tsp Pepper, cover with aluminum foil and place in oven on center rack.

Place Mushrooms in a strainer ovr a bowl, sprinkle with 1 tsp Salt and allow to drain for 30 minutes.

After pork has cooked for 30 minutes, flip meat with tongs then put Onion, Bell Pepper, and drained Mushrooms in dish surrounding the meat. Recover and cook for additional 30 minutes.

Remove from oven at let rest for at least 10 minutes before cutting the Pork.

Serves 4 - large portions of Pork topped with veggies.

Side dish suggestions: rice pilaf or mashed potatoes or my favorite, frozen veggies in cheese sauce.
