    8 chicken legs, 2 medium onions cut into strips of 1/2 inch, 2 tsps chili powder, 2 tsps curry powder, 1 tbsp minced garlic, 1 cup chicken broth (low fat and low sodium) Coat chicken sparingly with the chili powder and curry, In a 13x9 baking dish that has been sprayed with a cooking spray, add the chicken evenly in the pan. Salt and pepper to taste. Arrange onions and garlic around the chicken. Add the broth slowly till the chicken is just sitting in fluid. Cover with foil and bake.


Bake at 350 degrees covered with aluminum foil for 60 minutes and reduce heat to 300 degrees for 30 minutes or until chicken broth is evaporated and chicken is brown. Makes 4 servings
