Introduction

Ingredients

    1/2 cup soy flour
    1/2 cup unflavoured whey protein powder
    1/4 cup splenda sweetener
    2 tsp baking powder
    1 tsp cinnamon
    1/2 tsp almond essence
    2 tsp vanilla extract
    2 organic eggs or 4 whites
    1/2 cup low fat milk
    1 small grated apple (100g)

Directions

For the pancakes combine the flour, protein powder, sweetener, baking powder, cinnamon, milk, almond, vanilla, apple and eggs into a bowl. Heat a non-stick pan over a medium to low heat and lightly spray with a little oil. Place 2 tablespoonfuls of the batter into the pan and cook over a low to medium heat for about 3 minutes each side. Flip over and cook the other side until golden. Serve straight away.
