Great Mexican dish that is easy to put together and is great for leftovers. Great Mexican dish that is easy to put together and is great for leftovers.
Number of Servings: 10


    4 medium Potatoes, boiled (save the water)
    1 can Diced Tomatoes
    1 can Whole Tomatoes
    2 cans Chicken Broth
    1 cup Water (plus water from potatoes)
    1 medium Onion, chopped
    2 cloves Garlic, chopped
    3 Chicken breasts, fat trimmed, cubed
    0.5 cup Flour, white
    0.25 cup Extra Light Olive Oil (or less)

    Seasonings to tasted:
    1 tsp Garlic powder
    1 tsp Onion powder
    1 tsp Cumin
    1 tsp Pepper, red or cayenne
    1 tsp Salt
    1 tsp Pepper, black


1. Peel and cube potatoes. Boil for 20 minutes.
2. While potatoes are boiling, trim the fat from the chicken and cube it.
3. In a large pot, add oil and heat on medium. Once oil is hot, add chicken, onion, and garlic and brown.
4. Once browned, add flour and cook for 1 minute.
5. Add all other ingredients (including water from the potatoes), heat to boiling, then simmer for 30 minutes.
6. Add more spices to taste.
7. Top w/ shredded cheese (optional - not included in nutritional value)

Serving Size: makes 10 bowls
