Ingredients

    2 cup Flour, white
    1 cup Bob's Red Mill Coconut Flour
    2 cup Granulated Sugar
    1 tsp Baking Soda
    1 tsp Salt
    6 large Egg, fresh, whole, raw
    1.5 cup Olive Oil
    3 medium (7" to 7-7/8" long) Banana, fresh
    1.5 cup, diced Pineapple, fresh
    1 tbsp Cinnamon, ground
    1 tbsp Vanilla Extract

Directions

put all dry ingredients into bowl stir together, put all wet ingredients into dry and stir until well incorporated. oil and flour 3 cake pans evenly distribute the cake batter between the three tins, smooth the batter out to reach edges of tin. Bake all three at 325 for 35 min or until center is firm
