Introduction

Ingredients

    3/4 cup whole wheat flour
    1 cup Hodgson mills oat bran cereal
    1/3 cup chocolate protein supplement powder
    1/3 cup unprocessed bran
    1/2 cup granular splenda
    2 tsp baking powder
    1 tsp vanilla extract
    2 tsp ground cinnamon
    1/2 tsp nutmeg
    1/2 tsp ground ginger
    1/4 tsp allspice
    1/4 tsp pumpkin pie spice
    1 cup water
    4 large egg whites
    1/2 cup lite or unsweetened apple sauce
    3.5 oz pureed winter squash or pumpkin
    1 peeled and grated granny smith green apple
    52 raspberries


Directions

Preheat oven to 400 degress.
spray muffin pan with cannola oil spray or use aluminum foil muffin cups . Paper cups stick and are hard to remove
Add the dry ingredients to a large bowl and mix completely. To another bowl add the water, egg whites, apple sauce, vanilla, squash and grated apple and mix completly together.

stir the liquid ingredients into the dry ingredients until just combined. Overmixing will make the muffins tough. Add 4 raspberries to each of 13 muffin cups and spoon batter over the berries. Bake at 400 for 20 minutes or until golden brown and toothpick into center comes out dry. Cool and enjoy. Freeze those not eaten the first day.
