Ingredients

    16 ounces Chicken Breast (cooked), no skin, roasted
    4 tbsp chopped Onions, raw
    .125 cup cilantro (fresh) (by MINDTHEGAP7)
    1 serving Jalepeno Pepper- 1 pepper (by SRATERMAN)
    3 cup Sauce - Green Chile Enchilada Sauce - Las Palmas (by LCWP2000)
    4 serving Corn Tortilla - 6" Great Value - 2 Tortillas
    1 cup Cheese: Sargento Reduced Fat Cheddar, shredded
    2 cup, shredded or chopped Iceberg Lettuce (salad)
    .5 cup Salsa
    8 tbsp Daisy Light Sour Cream
    1 large whole (3" dia) Tomatoes, red, ripe, raw, year round average

Directions

Cook chicken and shred. Cook onion, cilantro and jalepeno in a skillet then add shredded chicken and 1 can enchilada sauce. Cook until heated. Pour the 2 remaining cans of sauce in a bowl and microwave until warm. Dip each tortilla in the sauce and fill with 1/8 of the chicken mixture. Roll up and place in a baking dish. Pour remaining heated sauce over enchiladas and sprinkle with cheese. Bake until melted. Divide lettuce onto 4 plates and place 2 enchiladas on top of each plate. Top with salsa, sour cream, and tomatoes.
