My QUICK, easy, low fat version of a family favorite My QUICK, easy, low fat version of a family favorite
Number of Servings: 3

Ingredients

    -1 14 oz package Oscar Myer (Louis Rich) Turkey Smoked Sausage (marked 2/3 less fat)
    -4 c Birds Eye Pepper Stir-Fry
    -2 c Organic tomatoes
    -1 c Brown rice (I used Success Boil-in-Bag version)

Directions

-Cut Sausage into pieces (cutting on a diagonal makes it pretty)
-Measure out frozen peppers in microwave safe container with 1/4 c water. Microwave 1-2 minutes, DRAIN
-Prepare Brown rice (hence the Boil in Bag) note: Family sized bags has 3 cups per bag in microwave which takes about 10 minutes
-In large NON-STICK (notice there is no oil/cooking spray) frying pan, brown sausage on both sides. They are already cooked but this gives it some color.
-Add tomatoes to fry pan, stir
-Add peppers and herbs to pan
-let simmer 5 minutes
Serve 1 c rice with 1/3 receipe
Note: I did 3 servings but you can make more or less depending on your needs.
-A normal can of diced tomatoes only has 1.5 c, so you can reduce to not have to open another can.
