Introduction

A lower fat cheese would lower the calorie count, but I had some full fat cheese that needed to be used so this recipe shows the calorie count when full fat cheese is used. Ingredients

    4 tbsp Smart Balance Buttery Spread
    1/4 cup Bob's Red Mill Gluten Free All Purpose Flour
    1 tsp Ground Mustard
    1/4 cup Milk -1% Low Fat Milk
    3 cup Cheddar Cheese Sharp
    1/8 tsp Pepper, white
    1 tbsp Worcestershire Sauce
    1 cup dry Whole Grain Elbow Macaroni, cooked

Tips

Using skim milk and low fat cheese will lower fat and calories.


Directions

Preheat oven to 350 degrees. Melt butter in a saucepan over medium heat, blend in flour and mustard, slowly stir in milk, and cook, stirring until thickened. Mix in 2 cups of the cheese and all remaining ingredients except macaroni. Cook and stir until cheese melts.

Off heat, stir in macaroni. Turn into a buttered 2-quart casserole dish, sprinkle with remaining cheese, and bake uncovered for 30 minutes. Casserole should be bubbling and starting to brown.
