Ingredients

1.5 cup Quaker Oats - Quick 1 Minute - Dry
.33 cup, unpacked Brown Sugar
1 tsp Salt
3 tsp Baking Powder
2 tsp Nutmeg, ground
.5 tsp Ginger, ground
.25 cup Canola Oil
2 large Egg, fresh, whole, raw
1 cup Milk, 3.25%
2 small (6" to 6-7/8" long) Banana, fresh
1 cup Flour, white
Directions
Combine dry ingredients in large bowl. The ginger flavoring in these is very, very mild. The next time I make these I will probably increase the ginger to a full teaspoon for stronger flavor. If you're not a fan of ginger you can use the recipe as written or omit it entirely.
Mash the bananas and add all the wet ingredients to the bowl. Mix well. Let the mixture sit while you preheat the oven to 375. Spray muffin tins with cooking spray and divide mixture into 15 muffin cups. Bake for 13-15 minutes or until golden brown around the edges and completely dry on top. Cool completely in tins.
Serving Size: Makes 15 muffins (one muffin per serving)
