Variation on baked rice pilaf, done with vegetarians in mind. Variation on baked rice pilaf, done with vegetarians in mind.

    2.0 cup Rice, white, long-grain, regular, raw, enriched
    4.0 cup Vegetable Broth
    1.0 cup, chopped Onions, raw
    1.0 tbsp Butter, unsalted
    1.0 tbsp Olive Oil


Preheat oven to 400. Chop onions & sautee in butter over medium heat until softened somewhat, about 5 minutes. Meanwhile, heat broth to boiling and keep hot. Add rice and olive oil to onions, stir to combine, making sure all grains are coated with fat. Transfer mixture to a glass 13x9 baking dish, add in hot broth, stir to combine all. Cover tightly with aluminum foil and bake for 30 minutes. If water is absorbed, remove and fluff rice with a fork before serving. Otherwise, cook for a few minutes more.
