Introduction

Low carb diets can get boring. I found this low carb version Pizza Chicken Bake to actually taste good and satisfy my need for pizza without all the carbs! Low carb diets can get boring. I found this low carb version Pizza Chicken Bake to actually taste good and satisfy my need for pizza without all the carbs!
Number of Servings: 8

Ingredients

    1/2 c. Pizza Sauce
    4 Large Boneless Chicken Breasts
    1 tbsp Extra Virgin Olive Oil
    1 tsp Oregano, ground
    1 tsp Garlic powder
    6 oz Mozzarella Cheese, part skim milk
    24 slices Pepperoni

Directions

1.Preheat oven to 400F

2.Put the pizza sauce in a small saucepan and simmer over low heat until it's reduced to one cup, about 20 minutes. Don't skip this step or the dish will be watery.

3.Trim chicken well, cut each breast in half, and then pound until they're as thin as you can get with out the chicken shredding apart.

4.Heat the olive oil over medium-high heat in the largest non-stick frying pan you have (you may have to do this in 2 batches if your pan isn't big enough.) Add the chicken pieces and cook 1-2 minutes on each side, just long enough to brown the chicken but not long enough to cook it through.

5.Place the browned chicken breasts in single layer in a glass casserole dish.

6.Spread each piece with a generous amount of the reduced sauce.

7. Put a thin slice of Mozzarella and few slices of pepperoni on each chicken breast.

8. Bake at 400F/200C for 25-30 minutes, or until the cheese is melted and starting to slightly brown.
