1 1/2 pounds (1 pkg.) Melissa's Baby Red Potatoes
2 tbsp Trader Joe's Extra Virgin Olive OIl
1 tsp black pepper, freshly ground
8 cloves of peeled garlic, chopped
6 sprigs of fresh thyme, minced
Tips
You may substitute dried thyme for the fresh and garlic powder for the garlic cloves, but the nutrition facts will be different.
Directions
Preheat oven to 425*F. Combine all ingredients in baking dish and mix well. Bake, uncovered for 10-15 minutes, or until potatoes are tender and browned. Gently stir once or twice during cooking. Remove from oven and serve warm. You may salt or use a no-salt or low-sodium seasoning to serve. The nutrition facts do not include this extra seasoning.
