Introduction

Chicken enchaladas Chicken enchaladas
Number of Servings: 10

Ingredients

    1 pd chicken breast
    2 tbsp Daisy Light Sour Cream
    10 Mission Yellow Corn Tortillas(extra thin 6in 3 tortillas)
    1.5 cup Colby and Monterey Jack Cheese shredded
    1 can Campbell's Cream of Chicken Soup (98% fat free)
    0.5 cup Rotel

Directions

Brown chicken in pan. Shred chicken with fork and add back to pan. Add can of chicken soup, 1/2 cup cheese, 2 tbsp. light sour cream, 1/4 cup of rotel. Spoon into tortillas and top with leftover rotel, and 1 cup of cheese. Heat in oven for about 10 min. (use low fat cheese to lower the Calories and fat)
