Number of Servings: 4


    2 salmon fillets, cooked and allowed to cool
    50 gm rice, cooked - pre-cooked weight
    1 tablespoon olive oil
    2 leeks, chopped
    1 head kale, stalks removed and thinly sliced
    4 hardboiled eggs, peeled and quartered
    2 teaspoons curry powder
    1/4 - 1/2 teaspoon chilli powder(optional)
    salt and pepper to taste


Add oil to a med hot pan, add in the chopped leeks and stir until softened.

Add in the cooked rice, curry powder and chilli powder

Pour in about 1/2 cup water and add the kale. Stir in and allow to cook briefly until kale is wilted and water has been absorbed. Fold in the salmon and the quartered hard-boiled eggs.

Season to taste. Serve while hot.
