    1 package whole wheat gnocchi
    2 chicken sausages
    2 tsp. olive oil
    1 cup sliced fennel
    1 cup sliced red pepper
    1 cup sliced onion
    1/2 cup shredded asiago cheese
    1/4 cup water reserved from cooking pasta
    Chopped fresh parsley


Cook gnocchi according to package directions.

Remove casing from the sausages. Slice and saute in 1tsp. olive oil (about 3 minutes on each side). Remove and set aside.

While sausages and gnocchi are cooking slice very thinly the fennel, red peppers, and onion. After sausages are done, add another tsp. olive oil and cook the vegetables until tender (about 14 minutes).

When vegetables are tender, add sausage gnocchi, cheese and 1/4 cup water saved from pasta and pepper to taste.

Stir together until cheese is melted.

Top with chopped parsley to add a splash of color.
