Baked Chicken Thighs with Veggies Baked Chicken Thighs with Veggies

Ingredients

    8.0 oz Chicken thigh with bone and skin
    1.0 cup, sliced Zucchini
    1.0 cup slices Carrots, cooked
    2.5 Red Potatoes - Small (1.75-2.5" diameter)
    1.0 cup, sliced Summer Squash
    3.0 tbsp Extra Virgin Olive Oil

Directions

Toss veggies with olive oil and your choice of seasoning. Season chicken thighs as desired (salt, pepper, garlic, etc.) both on top of and underneath the skin. Place veggies in an 8x8 baking dish. Place chicken thighs on top of veggies. Bake at 375 for 30-45 minutes.
