Ingredients

    0.75 cup Egg beaters
    1 lb Jennie-O Extra Lean Turkey Bacon
    7 eggs
    0.5 cup butter
    2 cups Cottage Cheese, 1% Milkfat
    0.5 cup Sour Cream, reduced fat
    8 oz Kraft 2% Shredded Sharp Cheddar Cheese
    1 cup Krusteaz Buttermilk Pancakes

Directions

Mix all ingredients together. Coat a mini muffin pan with PAM for Baking. Fill mini muffin cups about three-quarters. Bake at 375 for 25 minutes. You should get 3 "panfuls" of muffins, i.e. 3 times 24 muffins.
