Introduction

I hide spinach in here, and the kids will eat it!! I hide spinach in here, and the kids will eat it!!
Number of Servings: 10

Ingredients

    1 Whole Chicken - season, cook in crock pot, cool and de bone
    Sour Cream - 1 Cup
    1 4.5 oz can green chilies
    1 10 oz can tomatoes and green chilies
    Mexican style shredded cheese - approx 2 cups
    1 28 oz can green enchalada sauce
    Corn tortillas

Directions

Debone chicken
Mix all ingredients, holding back the spinach and half the cheese.
Pour a smalla amount of enchalada sauce in the bottom of the pan, and then put corn tortillas on the bottom. Spread about 1/2 to 1/3 enchalada mix on the tortillas, and cover with spinach. Repeat until mix is all gone. Cover and bake until bubbly. Add remaining cheese to top and put back in oven un til cheese melts. Great with a sald!
