Introduction

Number of Servings: 6

Ingredients

    1 15-oz can white beans, drained
    1/4 cup lemon juice, or juice of 1 large lemon
    2 7-oz. white tuna packed in water, drained
    2 tablespoons olive oil
    1/4 cup capers, drained
    1/4 cup finely diced red onion
    1/4 cup chopped fresh parsley

Directions

Place diced red onion in a small bowl and cover with cold water. Set aside.

Add the beans, lemon juice, and olive oil to a blender, and puree until smooth. Take your time with blending to get a smooth puree. Mix bean puree with tuna in a medium mixing bowl. Drain red onions and add to tuna mixture with capers and parsley. Season with salt and pepper to taste.

Serve on sandwiches, with raw vegetables or lettuce cups, or with whole grain crackers. This recipe freezes easily if you can't use all of it at once.
