Ingredients

1 pie shell (9" dia) Pie crust, graham cracker (prepared)
1 Can Borden Eagle Brand Sweetened Condensed Milk (14 oz)
1 cup Lime Juice (approx. 4 limes)
2 tsp Lime zest (approx 2 limes)
2 tsp Granulated Sugar
4 large Egg Yolk
1 cup, fluid Heavy Whipping Cream
10 g Icing Sugar (UK)
Tips
Use prepared Graham Cracker Crust for quicker prep time.
Chill bowl for whipping cream for better loft.
Zest limes before squeezing juice.
Use bottled lime juice instead of squeezing limes for quicker prep time.
Directions
Preheat oven to 350 Degrees F.
In a large bowl combine 1 can of condensed milk, lime juice, granulated sugar, egg yolks and lime zest. Stir until incorporated.
Pour milk/lime mixture into prepared and cooled graham cracker crust. Gently shake to remove air pockets and bubble. Place in 350 degree oven and bake for 12 - 15 minutes until custard is firm but jiggly. Once cooked, remove from oven and let cool.
In another large bowl, preferably chilled, pour in 1 cup of whipping cream and beat to thickened. Add small amount of icing sugar to sweeten and beat to soft peaks.
Once pie is cooled, decorate with whipping cream. Best if chilled for a short while in the freezer.
