Just like the french version but with a bit more flavour. Just like the french version but with a bit more flavour.
Number of Servings: 10


    1 cup Flour, white
    1tbsp Granulated Sugar
    1/4 tsp Salt
    2 Eggs, fresh
    1 1/2 cups Milk, 1%
    1/4 cup Butter, salted


In a medium bowl, whisk together the flour, sugar and salt & set aside. Measure the milk into a microwave safe container, add butter and microwave until the butter has completely melted in the milk. Add the eggs & whisk together quickly so egg will not cook in the warm milk & butter mixture. Make a hole in the flour mixture and slowly mix in the flour mixture with the whisk.

To cook: Heat a small non-stick skillet on high heat. Spray a bit of butter or Pam into the pan. Pour just enough batter in the hot skillet to coat the bottom of the pan. Once the crepe moves when you shake the pan (about 20 seconds), flip over and cook for an additional 10 seconds or until the crepe moves when you shake the pan. Repeat. Recipe should make about 10 small crepes or 7 large crepes.

Serve with no-sugar added E.D. Smith syrup, jam, or cottage cheese with fruit.
