8 sheets frozen phyllo dough, thawed
Butter flavored cooking spray, such as Pam
4 1/2 tsp. sugar (or Splenda, if preferred)
1 egg, beaten
1/3 cup thawed reduced-fat frozen whipped topping
2/3 cup lite lemon yogurt
1 can (11oz) mandarin orange segments, drained
2 kiwis, peeled, halved lengthwise, sliced crosswise
1/4 cup sugar free or lite orange marmalade, melted
Directions
Preheat oven to 350 degrees F. Coat baking sheet with cooking spray. Cover phyllo dough with damp paper towels. Place 1 sheet phyllo on surface. Coat with cooking spray; fold in half lengthwise. Coat folded sheet with spray. Sprinkle with 1/2 tsp. sugar. Repeat coating and sugaring with remaining phyllo, stacking folded phyllo together. Fold dough in 3/4" from both short ends. Brush edges with egg; sprinkle with remaining sugar. Prick center with fork. Transfer to baking sheet. Bake 15 minutes, until golden. Cool. Meanwhile, fold topping into yogurt. Spoon into shell. Top with fruit. Brush marmalade over fruit.
