These are the most moist, delicious, and flavorful bran muffins you will ever have! These are the most moist, delicious, and flavorful bran muffins you will ever have!
Number of Servings: 12


    1/2 c. white flour
    1c. whole wheat flour
    1 1/2 c. wheat bran
    1/2 c. brown sugar
    1 tsp. baking powder
    1 tsp baking soda

    1/2 c. cold coffee
    1/4 c. fancy molasses
    1/2 c. milk
    1 lg egg
    1/3 c. oil

    1 1/2 c. frozen blueberries


Mix dry ingredients together. In a separate bowl mix wet ingredients. Stir blueberries into dry ingredients, tossing to coat (this will prevent berries from bleeding into your batter). Stir wet ingredients into dry ingredients, stirring only until combined. (DO NOT OVERMIX as this will result in muffins that do not rise well.)
Pour into muffin tins sprayed with nonstick spray or use paper liners. Bake at 375 degrees for 20 minutes or until springs back when touched.
