This high fiber pasta dish has the flavor of pepperoni pizza without all the fat. This high fiber pasta dish has the flavor of pepperoni pizza without all the fat.
Number of Servings: 4


    I jar pasta sauce
    8 oz wheat rotini
    1 serving turkey pepperoni, chopped
    1 yellow or green bell pepper, sliced
    1 cup of diced mushrooms
    1 clove garlic, minced
    1/2 cup light ricotta cheese
    1/2 cup mozzarella


Cook pasta in boiling water, draining 2-3 minutes before it is done. In a large skillet, saute the bell pepper, garlic, and mushrooms with nonstick spray until almost tender. Stir in sauce, pepperoni, cooked pasta and ricotta. Pour into a 9x9 baking dish and sprinkle the mozzarella on top. Bake at 400 for 15-20 minutes until cheese is melted and bubbly.

Makes 4 large servings or 6 smaller ones
