Ingredients

    4 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers)
    16 oz 80/20 ground beef chuck
    2 cup Cauliflower, raw
    8 serving Salsa - Margarita's Mild - 2 TBS (by RICH60)
    1 large Egg, fresh, whole, raw
    4 serving HyVee 2% Reduced Fat Mozzarella Cheese Finely Shredded (by PSCHMIEGE)

Directions

Grate the cauliflower
Combine beef, cauliflower, beef, salsa, egg and cheese
Stuff into peppers
Place in slow cooker
Add an inch of water to the bottom
Cook on low for 8 hours
