Number of Servings: 6


    6 small (1-3/4" to 2-1/2" dia.) potatoes with skin
    16 ounces raw Chicken Breast, no skin or bone, fat removed
    0.35 cup Olive Oil
    1 cup, chopped Onions, raw
    season with your favorite seasonings. We used red pepper flakes & black pepper
    4 serving Garlic (4 cloves)
    1 cup Kroger Colby and Monterey Jack Cheese shredded
    3 serving bacon, hormel black label bacon lower sodium 2 pcs


Good for low sodium meal. Even with 2 of us cutting & chopping, it takes a little prep time. Be sure to allow for that if you do it all yourself. Easier to cut up chicken if it's still partially frozen.


Heat oven to 400 degrees. Cut up the chicken breasts & potatoes. Toss in a large bowl & add oil, stir to coat all pieces. Add the cut up onion & seasonings while stirring with wooden spoon. Poor into a LARGE (bigger than 9X13, otherwise cut your recipe back to fit) baking dish sprayed with Pam or other cooking spray. Bake for 60 min, setting timer every 20 min to take out & stir. The last 20 min, cook the bacon, drain the fat & pat dry, then crumble the cooked slices. When last 20 min of baking is up & your chicken is cooked through & potatoes are starting to brown, take out of the oven, sprinkle the top with the bacon & cheese, turn OFF the oven & stick baking dish back in oven for 5 minutes to melt the cheese & heat the bacon through.
