    6 medium Butter Red Potatoes diced
    1 medium onion diced
    1/2 green or red bell pepper diced
    1 TBS Extra Virgin Olive Oil
    Salt and pepper to taste
    1 cup water


Heat oil over medium heat in skillet on stove. Add onions and bell pepper -- cook until onions are translucent. Add potatoes and 1/2 cup of water. Cook 2 minutes uncovered then cover and cook 5-7 minutes. Stir and add additional 1/2 cup of water. Cover and simmer, stirring occasionaly until potatoes are soft.

Tastes great with breakfast!
