    4 T. orange juice
    4 T. red wine vinegar
    1 T. honey
    2 tsp. dijon mustar
    1 T. olive oil
    1/2 cup orange juice
    1 T. seasoned salt
    1/4 tsp. black pepper
    1/4 tsp. red pepper
    1-1/2 lb. elk steaks, cut into strips
    1/2 T. oil
    6 Cups romaine lelluce, torn up
    3/4 cup celery, sliced
    1 cup carrots, sliced
    3/4 cup green onion, sliced
    2 oranges, peeled and sectioned
    2 apples, diced


In a mainading dish, combine marinade ingredients. Add the elk steak strips and place in refrigerator until ready to cook, preferably a few hours. In a small bowl, whisk together the vinaigrette ingredients; set aside. In a large skillet, stir-fry the steak in oil for a few minutes, or until done. In a large bowl, toss romaine, carrots, apples, celery, onions, oranges and steak. Add vinaigrette; toss to coat. Serve immediately. Makes 12-1cup servings.
