Introduction

A tasty and relatively easy Quinoa salad with lots of raw veggies. A tasty and relatively easy Quinoa salad with lots of raw veggies.
Number of Servings: 12

Ingredients

    2 cups Quinoa, (I use 1 cup white and 1 cup red)
    1/2 cup Carrots, diced, raw
    3 large stalks Celery, diced, raw
    1 Red pepper, diced, raw
    1 small Onion, diced very small, raw (Or green onions if available)
    1/2 Cucumber with peel), diced, raw

    Dressing:
    1/4 cup Olive Oil
    1/4 cup Newman's Own Parmesan & Roasted Garlic Dressing
    1/3 cup Cider Vinegar

    Suggested Seasoning:
    1 tsp Dry Mustard Powder
    1 tsp Salt
    1 tsp Pepper, black
    2 tsp Oregano, ground

Tips

Optionally garnish with crumbled Feta Cheese and sliced olives. (Calories not included)


Directions

Cook 2 cups of Quinoa in 4 cups of unsalted water. While quinoa cooks dice all the veggies. Let quinoa cool for a few minutes then put in salad container and fluff.

Stir diced veggies into quinoa.

Stir in the dressing and seasonings. Reduce oil and salt if desired. If so I would recommend increasing the Apple Cider vinegar.



Serving Size: Makes 12 3/4 cup servings
