    Summer squash, .5 cup, sliced (remove)
    Onions, raw, 1 tbsp chopped (remove)
    Asparagus, fresh, 6 spear, small (5" long or less) (remove)
    Olive Oil, 1 tbsp (remove)
    Wild Rice, .5 cup (remove)
    Olive Oil, 1 tbsp (remove)
    Tofu, firm, .25 cup


Slice Zuchini , Chop onion and slice asparugus in one inch pieces.
Heat oil, Sautee zuchini and Onion until soft.
Dice Tofu, brown slightly.
At last minute add Asparagus and cook until it is Kelley green to maintain cruchiness. Add 1/2 cup of already cooked Wild Rice until warmed.
Garnish with light amount of shredded colby cheese or vegetarian alternative and serve.
