    1 tbsp Olive Oil
    2 cloves Garlic
    1 medium Onion
    8 oz Mushrooms
    4.5 oz Spinach (thawed & drained)
    3 wedges Laughing Cow Light Creamy Cheese, French Onion
    1/4 cup Milk
    1/2 cup Water
    Salt, Pepper to taste


Chop onion and garlic. Add olive oil to a pan and brown onion and garlic. Add mushrooms. Once mushrooms are turning brown, add spinach, cheese. Once the cheese starts melting add milk and water. The sauce is done once the cheese is melted. Add salt and pepper to taste.
Goes great with grilled chicken and a rice pilaf.
