    *Brown Rice, long grain, 1.25 cup dry
    Chicken Breast, no skin, 1.1 lb
    Onions, raw, .5 cup, chopped
    Olive Oil, 1 tbsp
    Garlic, 1 clove crushed
    *Margarine-like spread, Country Crock, regular, 2 tbsp
    Water, tap, 3 cup (8 fl oz)
    Chicken Broth or Bouillon, 1 packet (6 fl oz prepared)
    Scallops, raw, 1 unit 2 large or 5 small
    Shrimp, raw, 5 medium
    Salt, 1 tsp
    Pepper, black, .3 tsp
    Paprika, 1 tsp
    Tabasco Sauce, 1 tsp


1. bring water, margarine salt, chicken boullion to boil add rice let simmer. cook 45 minutes or until done to taste.
2. In pan add oil heat add chopped onion, garlic and bite size pieces of chicken breast. cook until chicken is tender. Add spices mix well then add to rice when rice has been cooking about 30 minutes. Add shrimp and scallops on top and let cook additional 15 -20 minutes or until rice is done.
I like to split into 5 tupperwares and refrigerate. I reheat in mica at work.
