Introduction

I used phyllo instead of egg roll wrappers so I could bake instead of derp fry. Faster, pretty much fat free except for sauteeing the seitan, and really delicious! Ingredients

    1 can Beans, black
    6 oz Seitan
    1 cup Yellow Corn
    0.5 cup Vegan cheddar
    0.5 cup, sliced Jalapeno Peppers
    74 gram(s) bell pepper, red, sweet, raw
    1/2 package Phyllo Dough (used dry)
    Seasonings to taste

Directions

Dice seitan in half-inch cubes, season, and saute in olive oil. Once crispy, season to preference (I use onion powder, salt, Cajon seasoning, and a shot of jalapeƱo and/or BBQ sauce). Toss in black beans, corn, jalapeƱos, diced bell pepper, and any extras you like (cilantro, spinach). Spoon a large scoop near the end of phyllo dough (2-3 dry sheets each), fold the sides in, and roll. Place on baking sheet. 350 for 15-20 minutes.
