Introduction

This is a lighter version of my mom's almost-famous pasta salad. It's a summer classic in our family and great as a side dish or a meal on it's own. This is a lighter version of my mom's almost-famous pasta salad. It's a summer classic in our family and great as a side dish or a meal on it's own.
Number of Servings: 25

Ingredients

    16 oz box of small pasta shells
    10oz can of chicken breast
    1 c of fresh or thawed peas (do NOT use canned peas)
    1/4 c of chopped onion
    1/8 c of chopped celery (or more if you really like celery)
    6 hard boiled eggs - chopped
    1 1/2 c of Miracle Whip light
    salt & pepper

Directions

Prepare box of shells as directed. Drain shells and let cool.

Drain chicken and separate chicken. It should look shredded.

In a large mixing bowl, combine half of the shells, all of the chicken, peas, onion, celery, egg and miracle whip. Stir until completely blended. Slowly add in the rest of the shells and continue to stir until completely blended. Salt and pepper to taste.

Cover and refrigerate overnight.

Makes about 25 1/2-cup servings.

    I used a whole package of frozen mixed veggies in mine. You don't even have to cook them - the crunch adds a nice contrast to the pasta! - 1/22/12
