Introduction

I remember chicken and rice made with neck bones from my youth just trying to make it modern. I remember chicken and rice made with neck bones from my youth just trying to make it modern.
Number of Servings: 8

Ingredients

    4 chicken thighs
    2 tablespoons olive oil
    Salt and pepper to taste
    3/4 cup brown rice
    1 cup sliced carrots

Directions

Brown chicken until golden on brown on each side.
Cover with spring water and boil until chicken falls off the bone.
Remove skin,bones, and skim off fat.
Add brown rice and carrots.
Simmer until rice has absorbed most of the liquid and serve.
I cooked this for some time at home and then transferred it to a small crock pot that I took to work. On low for 4hrs until lunch made a nice supper for myself and a few co-workers.
Makes about 8 1 cup servings
