    2 medium zucchini
    1 (10oz) package fresh mushrooms
    4 cloves garlic
    1 medium onion
    20 Nabisco Multigrain saltines
    1/2 can Campbell's Healthy Request Cream of Mushroom condensed soup
    freshly ground black pepper, to taste


Dice onion and chop zucchini and mushrooms. Mince/press garlic. Using a small amount of cooking spray, sauté onion, zucchini, mushrooms and garlic to sweat liquid from vegetables and partially cook. Grind pepper into vegetables. In a food processor or using a mortar & pestle, crush 10 saltines. Once liquid is mostly evaporated from vegetables, add (10) crushed saltines and a half can of Healthy Request (98% fat free and reduced sodium) cream of mushroom soup. Stir to combine. Scoop mixture into ungreased baking/casserole dish. Spread evenly into pan. Crush remaining 10 saltines and sprinkle them over the casserole. Bake uncovered in 375 degree oven until crumb topping is golden brown (about 20 minutes).
