Introduction

Ingredients

    1 medium yellow onion
    2 tbsp Grapeseed Oil
    2 tbsp Pine Nuts
    1/4 tsp Nutmeg, ground
    1 head, medium (5-6" dia) Cauliflower, raw, trimmed and cut into 1" pieces
    1 tbsp Horseradish
    1/4 tsp Sea Salt

Tips

Sprinkle with chives before serving, if desired.


Directions

In a small pot over medium-low heat, cook onions in oil with salt for 20 minutes or until onions are very tender but not browned. Stir occasionally. Add pine nuts and nutmeg and cook 1 minute more, stirring continuously.

Meanwhile, in large pot of boiling, salted water, cook cauliflower 10 minutes, or until very tender. Drain. In food processor, pulse hot cauliflower 10 times or until roughly chopped. Add onions-pine nuts mixture and horseradish to processor. Pulse 5 times or until almost completely smooth but not pureed. Season to taste with salt and pepper.
