    Jennie-O Lean Ground Turkey, 20 oz pkg
    1 can red kidney beans
    1 can black beans
    2 cans Bush's chili hot beans
    1 29oz and 1 15oz cans tomato sauce
    8oz Spicy V8
    5 Tbsp chili powder
    1 cup, chopped raw onion
    1/2 cup, chopped green peppers


Drain and rinse the kidney and black beans.

In a large pot (very lightly sprayed with cooking spray) combine all beans, tomato sauce, V8 and chili powder. Bring to just under a boil and reduce heat to medium. Simmer for 1/2 hour.

In a skillet sprayed lightly with cooking spray, brown the ground turkey and chopped onion. When almost done, add green peppers.

Drain if necessary (I cook my turkey til there's no fat remaining in the pan) and add to the big pot of chili base.

The base needs to simmer at least 30 minutes and then another 10 minutes after the addition of the turkey. You can simmer this a long time on med-low. The longer it simmers, the more the flavors meld. Just be sure to stir occasionally.

Makes appx 15 1-cup servings.

Garnish with a dollop of low-fat sour cream and some cilantro or dried parsley flakes.
