For TWO tacos:
0.5 serving Tomato (3 wheels)
25 gram(s) Chopped Yellow Onion
2 serving LaTortilla Factory Yellow Corn Organic Tortilla
1 serving I Can’t Believe It’s Not Butter, Original Buttery Spray, 5 sprays
0.25 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend
50 grams Avocados, California (Haas)
1 serving Butterball Turkey Bacon (1 slice)
2 tbsp Cilantro, raw
6 slice Mushrooms, fresh
20 grams Alfalfa sprouts
4 tbsp Egg substitute, liquid (Egg Beaters)
For ONE taco:
0.25 serving Tomato (1.5 wheels)
12.5 gram(s) Chopped Yellow Onion
1 serving LaTortilla Factory Yellow Corn Organic Tortilla
.5 serving I Can’t Believe It’s Not Butter, Original Buttery Spray, 2.5 sprays
0.25 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend
25 grams Avocados, California (Haas)
.5 serving Butterball Turkey Bacon (1 slice)
1 tbsp Cilantro, raw
3 slice Mushrooms, fresh
10 grams Alfalfa sprouts
2 tbsp Egg substitute, liquid (Egg Beaters)
Tips
Avoid using any oils or sprays that contain calories, fat, or high amounts of sodium. Avoid using sour cream or overloading the avocado. Do not make into guacamole as that will alter the nutrition content; USE fresh avocado slices only. Do not use cheese.
Directions
Prep: Chop handful of yellow (or white) onion; chop about (3) tomato wheels into cubes and divide in half; measure (4) tbs of egg substitute (or egg whites) using half (2 tbs) per tortilla; set aside (2) tortillas; wash and measure approximately 20 grams of alfalfa sprouts using half per taco. Using the "I can't believe it's not butter cooking spray", cook 1 slice of turkey bacon and when fully cooked, chop into little pieces. Place 1/2 of the cooked turkey bacon, chopped onions, seasoning, and mushrooms into a cup with 2 tbs of egg substitute (or use the full serving of 4 tbs of egg substitute with all ingredients and divide in half evenly to place into 2 tacos).
Cooking directions per one taco (for the serving size of 2, repeat the following):
1. Medium-sized skillet, medium heat.
2. Spray "I Cant believe its not butter" cooking spray to coat the pan
3. lightly toast both sides of the tortilla until light golden brown
4. When tortilla is lightly toasted, lightly coat tortilla with spray butter.
5. Reduce heat to low.
6. Grab an additional skillet and pour egg substitute mixture (chopped veggies and bacon) and scramble contents together until it is cooked evenly.
7. When cooked evenly, place into the warm tortilla on a plate and garnish with fresh onions, cilantro, and 25 grams of California avocado cut into slices per taco. Repeat twice for the full serving of two tacos.
