Growing up it seemed potato salad was a staple in many of our meals. We lived on a farm, and had a huge potato field which equates into a whopping bunch of potatoes! This salad is served warm (warm salads are a favourite of mine) & is seriously delicious when mixed & served with homemade mayo. Ingredients

    3 medium (2-1/4" to 3-1/4" dia.) Baked Potato, with skin
    2 serving Eggs - Hard Boiled Whites - 1 Large Egg
    .5 serving LaRosa's Red Onion Slices (14 g)
    3 serving Bacon, Applegate Farms Turkey Bacon (1 slice)
    1 stalk, large (11"-12" long) Celery, raw
    1 clove Garlic
    1 tbsp Grape Seed Oil
    Salt & pepper
    Tarragon

Directions

Preheat oven to 350.
Cut potatoes into chunks place in a roasting pan, add the garlic & toss with 1 TB. grape seed oil. Place in oven for 25 mins.
Cut the hard boiled eggs in half & remove the yolks. Cut into small rings or chunks & put aside.
Crumble the bacon, chop red onion & celery.
Remove potatoes from the oven, let cool for 5 mins. & toss all of the ingredients together in a bowl, including roasted garlic pieces.
Add salt & pepper & 1 1/2 TB. homemade mayo.
Serve warm with a sprinkle of tarragon garnish
