Introduction

A great use for left over fresh lobster! You could also used canned lobster but being a Mainer I use fresh :o) A great use for left over fresh lobster! You could also used canned lobster but being a Mainer I use fresh :o)
Number of Servings: 4

Ingredients

    1lb cooked lobster diced up
    4 Tbsp butter, melted
    1/4 cup mayonnaise
    Salt and Pepper to taste
    grated or shredded parmesan cheese
    sandwich rolls of your choice

Directions

Chop up the lobster into smaller than bite size peices and place in medium size bowl. Add melted butter and toss to coat the lobster. Add mayonnaise and salt and pepper, and toss to coat again. Spread lobster salad on the roll and sprinkle parmesan cheese over the salad and top with the other half off the roll. Last step: Eat and enjoy!!
